> 3 dayIts not just a sales pitch; this knife is truly everything that it is purported to be: razor sharp with an edge grind familiar with the cutting of meat, trustworthy grip even with a greasy hold & finally, rigid no-flex spine even when the full length of the knife is used. Dollars spent v quality makes this knife an invaluable tool in our kitchen. Definitely would spend a couple of extra bucks for the blade guard especially if you flat store it like we do.

Greater than one weekYou can make razor thin slices with this on roasts, steak, etc. Saw this recommended on TV. Great knife.

> 3 dayThis is my first foray into specialty knives. I was looking for a quality knife for some of my smokes. I tried this on my Thanksgiving turkey and it was great. The blade is a little flexible for beef roast with a thick crust/bark though. I would definitely purchase again. I also purchased a Fibrox Pro boning knife, and I am going to purchase a Fibrox Pro chefs knife.

> 3 dayExtremely sharp and very easy to control well. I make a lot of tri-tip and this is perfect for slicing through it. Ive not had to sharpen it yet so I cant speak to that, but all in all I am very happen with the blade.

Im a knife snob who carries pocket knives that cost around the same as a nice smart phone, so Im kinda particular about blade steel, handle material, construction, etc... I bought this knife as a birthday gift for a friend who recently started smoking/bbqn large cuts of meat. I chose it based solely on the brand, and the reviews, instead of price and apearance. Cause lets face the facts, its a very basic design, its not a super steel, and a fairly low price tag compared to other knives in this category. Turns out those reviews were right! This thing is sharp, stiff with a lil bit of flex, tons of grip on the handle on greasy situations, cleans up quick, its dishwasher safe (if thats your thing), all around great knife. Im honestly thinking of replacing my current brisket knife, which was almost triple the price. On another note, I purchased the 8 chefs knife from this collection as well, also a heck of a bargain and would recommend both knives to anyone looking for quality kitchen cutlery.
