> 3 dayI use this knife at home, not in a professional kitchen, and I could not be more impressed. Ive been in the restaurant industry my entire life and this is one of the best knifes Ive ever been around. Ive used and been exposed to almost every brand of knife, both at home and in the business, Shuns, Globals, Wusthofs, Henckles, etc, and this particular Global is one of my favorites. Between my Chefs knife and this knife, they cover 95% of my work in the kitchen. This is a great vegetable knife for slicing, but will rock chop as well. Just keep in mind this is not a Chefs knife, and should not be used as such. I will never use this knife to break down a chicken. However, if you want to power through some vegetable prep with ease, this is your knife.

> 3 dayThe design of this knife is perfect for slicing and chopping vegetables and fruits like melons.. Very sharp and makes quick work of halving a large onion or dicing squash. Those who are used to a pointed chefs knife may find it a bit awkward at first but I find a pointed knife does not work as well as this one. The squared off end makes it easy to use both hands if necessary to attack a particularly hard vegetable with ease

> 3 dayIve owned this knife for almost seven years. For the majority of that time Ive been a sous chef at a high end French bistro. Ive been a knife skills instructor for culinary students, as well as a restaurant consultant. Ive brought this knife to work every single day and it has seen countless food items, meat, chicken, fish, vegetables, fruits, you name it. This is always the first knife I reach for. I would rank this as one of the best mass produced professional kitchen knives of all time. It is a pure joy to use. Its a durable workhorse that holds an edge for as long as any knife Ive tried. I put a sharper angle on the blade than came factory and if you have the skills to hand sharpen this to sub 10°, its well worth it. It will keep the edge. The only downside of this knife is that you will not be able to efficiently work around bones that are in meat youd like to save a whole cut. Overall an 10/10. Give it a try if youre on the fence.
